Cauliflower

Cauliflower consists of a dense, compact head called the "cabbage," which is usually white, although purple, green, and orange varieties also exist. The head is surrounded by thick, sometimes tough green leaves. The texture is firm, but it becomes soft when cooked. The flavor is mild and slightly sweet. It is extremely versatile in the kitchen and can be eaten raw, roasted, boiled, steamed, baked, or even pureed. Cauliflower requires a cool climate and should be planted so that its main growth occurs during the cool temperatures of spring or fall. The plant needs rich, moist soil and regular watering to grow well.
