"Add a healthy and trendy twist to your culinary repertoire with Sorrel 'Red Stripe'. This versatile herb offers delicious variety in modern kitchens. The young, fresh green leaves, with their decorative red veining and stalk, not only add colour to trendy salads but also bring a juicy acidity and serve perfectly as a flavourful garnish.

When fully grown, the leaves transform into lanceolate leaves, ideal for inclusion in stews, soups or as a surprising alternative to spinach. Optimise growth by cutting the leaves just above the ground, which encourages the development of new leaves. Be careful not to let the leaves get too old, as they can become considerably more acidic and possibly bitter in flavour.

For a harvest of young, tender and fresh green leaves, it is advisable to grow Sorrel as babyleaf at high densities (20x2 cm). In babyleaf cultivation, you should re-sow annually, taking into account the plant's slow germination and development. Blood sorrel grows more slowly than spinach sorrel, but once it gets going, it becomes extremely productive. Suitable for all types of soil, but requires regular watering, especially in extreme heat and drought.

For a perennial crop as a perennial, use a wider planting distance (20x20 cm) and allow the crop to mature quietly for the first harvest in late summer. In the second year, it can be harvested early in spring. When flowering, cut off shoots to avoid tough leaves. If the plant overshoots, cut it to the base for new growth of young leaves in autumn.
