Carrot
The carrot (Daucus carota) is a herbaceous plant from the Apiaceae family. Originally from Western Asia and Europe, it has been cultivated for its edible roots for centuries.
Today, the carrot is one of the most consumed vegetables. Due to a wide variety of types, carrots can be grown year-round.
Although the orange carrot has been the most cultivated since the 18th century, older varieties such as white, purple, and yellow carrots are being rediscovered. These older varieties are often more aromatic, richer in dry matter, and therefore more nutritious.
There are two main types of carrots: early and summer carrots and storage carrots.
