Spinach
Spinach (Spinacia oleracea) is an edible, green leafy plant belonging to the Amaranthaceae family. Originally from Central Asia, spinach has been cultivated for centuries and was introduced to Europe via trade routes in the 12th century. Spinach is relatively easy to grow, but it is sensitive to drought and heat, which can lead to premature bolting and seed formation. Therefore, spinach is typically sown either in early spring for a late spring harvest or in late summer or early autumn for a harvest in the fall or late winter.
