Common sorrel

Common sorrel (Rumex acetosa) is a classic perennial vegetable garden plant. Its fresh, tangy leaves add flavor to spring soups, creamy fish sauces, and omelets. Rich in vitamins A and C and minerals, sorrel provides a welcome green harvest after winter.

Growing

Prefers partial shade to mild sun and moist, humus-rich, well-drained soil. Mulch to prevent drying out and add compost annually.
Remove flower stalks for tender leaves or leave them for seed production and pollinators.

Harvest

Harvest from March to November by picking the outer leaves once they reach 8 cm. Plants regrow continuously.
Young leaves can be eaten raw; larger leaves are best cooked or blanched to soften the acidity.
